Ingredients
- 2 cooked free-range chicken breasts, shredded into small pieces
- 200g plain corn tortilla chips
- 6 spring onions, thinly sliced
- A handful of red or green sliced jalapeño peppers
- Small bunch coriander, leaves roughly chopped
- 140g cheese, grated
- Your choice of salsa
Method
- Step 1. Heat oven to 200C/180C. Layer up the tortilla chips in an ovenproof dish or baking tray. Add your chopped chicken, spring onions, cheese and jalapeños. Bake for about 8 mins or until the cheese is melted.
- Step 2. To serve, sprinkle with the coriander and eat with your favourite salsa.
