Ingredients
- 4 boneless skinless free-range chicken breasts
- 6 slices of bacon, chopped
- 1/2 tsp kosher salt
- 1/4 tsp of black pepper
- 1 cup shredded cheddar cheese
Method
- Step 1: Grab a non-stick skillet over medium heat. Add your chopped up bacon and cook for 7-9 minutes and stir this occasionally until it starts to get crispy. Transfer the bacon onto a paper towel and set this aside. Keep 1 tablespoon of the drippings from the skillet but discard the rest.
- Step 2: Grab your chicken pieces and rub them with salt and pepper. Heat your skillet with the reserved dripping over medium heat. Next, add your chicken and cook this uncovered for 14-16 minutes. Cook this until the juices of the chicken run clear. Remove it from the heat and top each chicken breast with 1/4 cup of cheese. Cover your skillet and let it stand for 4 minutes or until the cheese has melted. Place it on your plate and top it with bacon. Serve it with some nice green rocket salad.
