Satay Chicken Stir Fry

You’ll only need 20 minutes to make this Satay Chicken Stir Fry with Peanut Butter, Coconut Milk and your favourite vegetables. It’s a quick stir fry dish that is absolutely delicious!

  • 500g free-range chicken breast, cut into strips
  • 1 tbsp olive oil
  • 1 cup coconut milk
  • 2 tbsp sweet chilli sauce
  • 2 chicken stock cubes
  • 1 cup snow peas
  • 1 red capsicum small
  • Mixed veggies (we like broccoli and mushroom). Choice is yours!


  • Step 1: Grab a medium saucepan and fry off your chicken strips in oil until it's golden.
  • Step 2: Mix in your coconut milk, peanut butter, sweet chilli sauce, chicken stock and pour over the chicken.
  • Step 3: Add your snow peas and your red peppers.
  • Step 4: Serve with some plain boiled rice.
