Ingredients
- 500g free-range chicken breast, cut into strips
- 1 tbsp olive oil
- 1 cup coconut milk
- 2 tbsp sweet chilli sauce
- 2 chicken stock cubes
- 1 cup snow peas
- 1 red capsicum small
- Mixed veggies (we like broccoli and mushroom). Choice is yours!
Method
- Step 1: Grab a medium saucepan and fry off your chicken strips in oil until it's golden.
- Step 2: Mix in your coconut milk, peanut butter, sweet chilli sauce, chicken stock and pour over the chicken.
- Step 3: Add your snow peas and your red peppers.
- Step 4: Serve with some plain boiled rice.
