Ingredients
- 2 Free Range Chicken Breasts
- 1 tbsp of oil
- 1 cup of chicken broth
Method
- Step 1: In a large skillet with a lid, preferably non-stick, heat the olive oil over medium heat.
- Step 2: Add salt and pepper to the chicken breasts. Add them to the pan to brown for 4 minutes.
- Step 3: Flip them over and brown for another 4 minutes.
- Step 4: Add in your chicken broth and reduce it to a medium-low. Place the lid on the skillet and allow to simmer for 5-8 minutes. Note: Chicken should register between 160-165 degrees (it will continue to cook when removed from heat).
- Step 5: Remove the chicken from the skillet. Allow it to rest for 3 minutes.
- Step 6: Place the chicken in the bowl of a mixer. Turn the mixer until the chicken is shredded to your desired texture.
