Ingredients
- 1kg free-range chicken wings
- 1 garlic clove, finely grated
- 1/2 lemongrass stalk (inner core only), finely grated
- 2cm piece (10g) ginger, finely grated
- 1 tsp dried chilli flakes
- 100g golden syrup
- 1/4 cup soy sauce
- 1/4 cup rice wine vinegar
- A handful of chopped peanuts
- 2 lime cheeks
- Coriander leaves to serve
Method
- Step 1: Preheat the oven to 220°C. Combine lemongrass, garlic, ginger, chilli and rice wine vinegar in a deep baking tray. Add your chicken pieces, toss well until they are all evenly coated.
- Step 2: Turn your wings every 5 minutes to coat them in the sauce, for 25-30 minutes or until sticky and golden.
- Step 3: Sprinkle herbs and chopped peanuts over the chicken wings and serve with lime.
