  • 1kg free-range chicken wings
  • 1 garlic clove, finely grated
  • 1/2 lemongrass stalk (inner core only), finely grated
  • 2cm piece (10g) ginger, finely grated
  • 1 tsp dried chilli flakes
  • 100g golden syrup
  • 1/4 cup soy sauce
  • 1/4 cup rice wine vinegar
  • A handful of chopped peanuts
  • 2 lime cheeks
  • Coriander leaves to serve


  • Step 1: Preheat the oven to 220°C. Combine lemongrass, garlic, ginger, chilli and rice wine vinegar in a deep baking tray. Add your chicken pieces, toss well until they are all evenly coated.
  • Step 2: Turn your wings every 5 minutes to coat them in the sauce, for 25-30 minutes or until sticky and golden.
  • Step 3: Sprinkle herbs and chopped peanuts over the chicken wings and serve with lime.
