Ingredients
- 500 g of chicken mince
- 4 large bell peppers
- 12 garlic cloves
- 1/2 cup of red chopped oven
- 2 tbsp of vegetable oil
- 1 can of diced tomatoes
- 2 tbsp of Italian seasoning
- Kosher salt and black pepper to taste
Method
- Step 1: Preheat the oven to 200 degrees.
- Step 2: Cut bell peppers in half and take out the seeds and membranes. Next, get a casserole dish and put a thin layer of tomato sauce.
- Step 3: Into another pan, add the vegetable oil, and sauté the onions for about 5-7 minutes until translucent. Add in your minced garlic and cook this for 2 minutes. Add in your chicken mince.
- Step 4: In a large bowl, combine the cooked chicken mince, brown rice and diced tomatoes. Add kosher salt and black pepper. With a large spoon, scoop the mixture into each bell pepper in half.
- Step 5: Bake and cover with foil for 30 minutes. If you like it cheesy, sprinkle some mozzarella cheese on top and bake it for another 5 minutes.
