Ingredients
- 4 skinless chicken breasts
- 400 g chicken minced
- 2 spring onions, finely chopped
- 2 cloves garlic, crushed
- 50 g fresh breadcrumbs
- 1 small piece of fresh root ginger, finely grated
- 2 tsp of fresh lime juice
- 2 tbsp vegetable oil
- 2 tbsp sweet chilli sauce
- 2 tbsp coriander leaves, finely chopped
Method
- Step 1: Into a bowl, mix all the ingredients (except the oil) until it's evenly incorporated using your fingers to mix it in. If you prefer to use preparation gloves, you can. Once done, cover and place it into the fridge for at least 30 mins.
- Step 2: With damp hands, shape your chicken meatballs (bite-size shape) and place them onto a plate.
- Step 3: Grab a large frying pan and add your vegetable oil to the pan and fry the meatballs over medium-high turning both sides until golden for about 3-5 minutes. Do this in batches depending on the size of your pan.
