Ingredients
- 2 chicken breasts, diced
- 10 asparagus
- 1 cup of mushrooms, sliced pieces
- 1/2 cup of low sodium chicken broth
- 1/4 cup feta cheese, crumbled
- 3 cups of whole wheat pasta
- 2 medium tomatoes
- 1 tsp of cayenne pepper
- 1 tbsp of extra virgin olive oil
Method
- Step 1: Start by cooking your pasta as per the instructions on the package.
- Step 2: Cut up your chicken breast into bite-sized cubes and place these into a pan with some olive oil. Cook until partially done.
- Step 3: Add your asparagus, mushrooms and continue to cook this until your chicken is done.
- Step 4: Next, add your chicken broth, cover and cook until your asparagus is crispy and tender.
- Step 5: Add your pasta, cayenne pepper and feta cheese. Remove from the heat.
- Step 6: Serve into bowls and add your fresh diced tomatoes on top for garnish.
