Ingredients
- 2 cups cooked rice
- 1/2 kg pork loin, cut into small piece
- 1/2 cup frozen peas
- 1/2 green onion, chopped
- 1/4 cup of green and red capsicum
- 2 cloves garlic, minced
- 2 tbsp of vegetable oil
- 2 eggs, lightly beaten
- 1 tbsp of soy sauce
- 1/4 tsp of ground ginger
- Salt and pepper to taste
Method
- Step 1: Heat vegetable oil in a large skillet or wok over medium-high heat.
- Step 2: Add pork and cook until browned on all sides.
- Step 3. Add onion and garlic to the skillet and cook until the onion is translucent.
- Step 4: Add frozen peas and capsicum and cook until tender.
- Step 5: Push the pork mixture to one side of the skillet and pour the beaten eggs on the other side. Scramble the eggs until cooked, then mix in with the pork mixture.
- Step 6: Add cooked rice to the skillet, soy sauce and ground ginger. Stir well.
- Step 7: Add salt and pepper to taste, and stir until well combined.
