Ingredients

  • 2 racks of pork ribs
  • 2 tbsps paprika
  • 2 tbsps brown sugar
  • 1 tbsp cumin
  • 1 tbsp chilli powder
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 cup BBQ sauce
  • Aluminium foil

Method

  • Step 1: Preheat oven to 200°C. In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, cumin, chilli powder salt and black pepper to make a dry hub
  • Step 2: Rub the dry rub onto the ribs, making sure to cover all sides and wrap the ribs tightly in aluminium foil and place them on a baking sheet.

  • Step 3. Bake the ribs for 3-4 hours or until the meat is tender and easily pulls away from the bone.

  • Step 4: Remove the ribs from the oven and let them rest for 5-10 minutes, and preheat the grill to medium-high heat.
  • Step 5: Brush BBQ sauce onto the ribs, making sure to cover both sides.

  • Step 6: Place the ribs on the grill and cook for 3-4 minutes per side, or until the BBQ sauce has caramelised and the ribs are charred to your liking.

  • Step 7: Remove the ribs from the grill and let them rest for a few minutes before slicing and serving.
