Ingredients
- 4 bone-in pork chops
- 2 tbsps of olive oil
- 3 cloves of garlic, (minced)
- 1 lemon, (juiced)
- 1/2 cup of store-bought chicken broth
- 1 tbsp of butter
- 1 tbsp of fresh parsley, (chopped) (optional)
- Salt and pepper, to taste
Method
- Step 1: Preheat the oven to 200°C.
- Step 2: Season the pork chops with salt and pepper on both sides.
- Step 3. Heat the olive oil in an oven-safe skillet over medium-high heat. Add the pork chops to the skillet and cook for about 3-4 minutes per side, until browned and cooked through.
- Step 4: Remove the pork chops from the skillet and set them aside.
- Step 5: Add the minced garlic to the same skillet and stir for about 1-2 minutes until fragrant.
- Step 6: Add the lemon juice and chicken broth to the skillet and stir to combine. Cook for about 3-4 minutes, until the sauce, has reduced by half.
- Step 7: Return the pork chops to the skillet and spoon some of the lemon sauce over them.
- Step 8: Transfer the skillet to the preheated oven and bake for about 10-12 minutes until the pork chops are fully cooked.
- Step 9: Remove the skillet from the oven and add the butter to the sauce. Stir until the butter has melted and the sauce is smooth.
- Step 10: Serve the lemon pork chops hot, garnished with fresh parsley if desired and your favourite sides like mashed potato or some broccoli.
