Lamb souvlaki is a classic Greek dish made with marinated and grilled lamb skewers. This flavourful and aromatic dish is perfect for grilling season or as a main course for a Mediterranean-inspired meal.

Ingredients

  • 1kg lamb leg meat (cut into cubes)
  • 2 tbsps of olive oil
  • 3 cloves of garlic, crushed
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • 2 small red onions sliced
  • 1 iceberg lettuce, cored and sliced
  • 5 tomatoes, chopped
  • 8 wooden seekers to cook
  • Pita bread x 8

Method

  • Step 1: To prepare the lamb, combine all the ingredients in a large Ziploc bag. Seal the bag and gently massage it to ensure that the marinade coats the meat evenly. Lay the bag flat in the refrigerator and let it marinate overnight. If possible, turn the bag over after a few hours to ensure even marination.
  • Step 2: About an hour before you plan to grill the lamb, remove it from the marinade. You can grill the lamb over a fire (coals) or on a griddle pan on the stovetop.
  • Step 3: Thread the meat onto 8 skewers and cook to your desired level. If grilling on a griddle pan, lightly brush each skewer with a little olive oil to prevent sticking.
  • Step 4: Once the lamb is grilled, season the kebabs with salt and spritz them with fresh lemon juice for a burst of flavour.
