Roast Chicken With Herb Oil

  • 2kg Free-Range Chicken
  • 4 cloves garlic, crushed
  • 1 red onion, chopped
  • 1 tbsp extra virgin olive oil
  • 1 cup of breadcrumbs
  • 1 small packet of cherry tomatoes, cut in half
  • Homemade Herb:1 tbsp dried parsley, 1 tbsp dried oregano, 1 tbsp dried basil, 1 tbsp dried thyme


  • Step 1: Grab a bowl and place one teaspoon of each dried herb, all the breadcrumbs and your cherry tomatoes in a bowl. Mix well. Next grab a pan, lightly oil and place your onion cooking until softened. Stir through the breadcrumb mixture.
  • Step 2: With your chicken, fill the cavity with the stuffing and close this with some skewers. Tie up the drumsticks and fold them under the wings. Into another bowl add the rest of the remaining herbs, crushed garlic and oil. Rub the herb mixture all over the chicken.
  • Step 3: Place the chicken onto a roasting rack over a large baking tray. Bake 190 degrees preheated for an hour and 45 mins, or until it's cooked through.
