Ingredients
- 8 Lamb Loin Chops
- 3 Tbsps of Olive Oil
- 2 Tbsps of Parsley (minced)
- 10 Cloves of Garlic (minced)
- Dried Thyme
- Salt
- Pepper
Method
- Step 1: Season your lamb pieces generously with salt, pepper and thyme.
- Step 2: Over a large pan on medium-high heat, pour some olive oil in until it starts to lightly smoke. Add your chops and your cloves of garlic. Cook each side for about 3 minutes or until they have evenly browned.
- Step 3: Remove the chops and keep the garlic in the pan. Lower the heat to medium and add your olive oil, lemon juice, and minced parsley. Scrap the brown bits on the bottom of the pan and let your sauce simmer for 1 minute. Then serve with your chops.
