Ingredients
- 300 grams beef sirloin, thinly sliced
- 250 grams of rice noodles or egg noodles
- 2 tbsps vegetable oil
- 3 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 1 bunch bok choy, chopped
- 5 red chillies
- 100 grams of snow peas, trimmed
- 2 tbsps soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- Salt and pepper, to taste
- Fresh spring onions, for garnish
Method
- Step 1: Cook the noodles according to the package instructions. Drain and set aside. In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, and sesame oil. Set aside.
- Step 2: Heat one tablespoon of vegetable oil in a large wok or skillet over high heat. Add the beef slices and stir-fry for 2-3 minutes, or until cooked to your desired level of doneness. Remove the beef from the wok and set aside.
- Step 3: In the same wok, add another tablespoon of vegetable oil and sauté the minced garlic for about 30 seconds, until fragrant.
- Step 4: Add the sliced red bell pepper, carrot, bok choy, red chillis and snow peas. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.
- Step 5: Return the beef to the wok and add the cooked noodles. Pour the sauce mixture over the ingredients and toss everything together until well-coated. Cook for an additional 2 minutes, allowing the flavours to blend.
