Ingredients
- 500g ground beef
- 1 onion, finely chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 2 tbsps tomato paste
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 500g potatoes, peeled and diced
- 50g butter
- 1/4 cup milk
- 1/4 cup grated cheddar cheese (optional)
Method
- Step 1: Preheat your oven to 180°C. In a large skillet or frying pan, heat some oil over medium heat. Add the chopped onion and diced carrots. Sauté for about 5 minutes until the vegetables start to soften. Add the minced garlic and ground beef to the skillet. Cook, breaking up the meat with a spoon, until browned and cooked through.
- Step 2: Stir in the tomato paste, beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Simmer the mixture for 10-15 minutes, allowing the flavours to meld together.
- Step 3: Add the carrots, beans celery, and mushrooms to the pot. Stir and cook for a few minutes until the vegetables start to soften. Meanwhile, place the diced potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are tender about 10-15 minutes. Drain the potatoes and return them to the pot.
- Step 4: Add back the browned lamb to the pot and stir in the tomato paste. Cook for another minute to coat the meat and vegetables with the paste.
- Step 5: our in the beef or vegetable broth and red wine (optional). Add the bay leaves and dried thyme. Season with salt and pepper to taste. Bring the stew to a simmer, then cover the pot with a lid and transfer it to the preheated oven.
- Step 6: Add the butter and milk to the pot of potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
- Step 7: Transfer the beef mixture to a baking dish or individual ovenproof dishes. Spread the mashed potatoes over the top, covering the beef completely. You can use a fork to create a pattern on the surface. Sprinkle-grated cheddar cheese on top if desired.
- Step 8: Place the baking dish(es) in the preheated oven and bake for 20-25 minutes, or until the topping is golden and the filling is bubbling. Remove from the oven and let it cool for a few minutes before serving.
