Ingredients
- 1 round roast (approximately 1.5 kg)
- 1/4 cup of extra-virgin olive oil
- 3 cloves garlic, minced
- 1 Tbsp of chopped fresh rosemary
- 1 Tbsp of chopped fresh thyme leaves
- 4 Tbsps of kosher sal
- 1 Tbsp of freshly ground black pepper
Method
- Step 1: Let your roast sit uncovered on a wire rack for at least 1 hour prior to roasting.
- Step 2: Preheat your oven to 450℃, in a small bowl - combine your oil, garlic, rosemary, thyme, salt and pepper. Then rub this all over your roast.
- Step 3: Roast your beef for 15 minutes at 450℃, then drop the temperature down to 325℃ and roast for an additional 1 hour and 30 minutes.
- Step 4: Remove from the oven, and let it rest for 15 - 20 minutes.
- Step 5: Serve.
