Ingredients
- Drumsticks x 8
- 1 medium onion, chopped
- 2 bunches of Chives
- 3 cloves of garlic
- 2 tbsp of thyme
- 2 tbsp of marjoram leaves
- 2 scotch bonnet chillies
- 1 lime, juiced to make 2 tbsp
- 3 tbsp of worcestershire sauce
- Kosher salt and black Pepper
- 2 Spring Onions, chopped up for garnish
Method
- Step 1: To create the seasoning, finely chop up your onion, garlic, chives, thyme, bonnet chillies and marjoram. Start mixing in your Worcestershire sauce and lime juice. Season with kosher salt and black pepper, pour into a sterilised bottle and chill. By doing this, it will keep for a month and the flavour will be at its best after about three days. If you want to use that day, refrigerate for at least 4 hours or overnight.
- Step 2: Grab a knife and make some deep cuts into the flesh of each piece of chicken, and then tip this into a dish. With your seasoning rub 2 tbsp over the chicken and leave it to marinate for 1 hour in the fridge.
- Step 3: Heat up the grill to high and then down to medium. Line your grill tray and set the rack in it or set a barbecue for cooking with indirect heat. From there, wait for the coals to become ashen. Grill the chicken pieces or barbecue until you see that they're cooked through and are nice and brown. Grab your spring onion and garnish it on top of your chicken drumsticks.
