This easy creamy cheese chicken along with a few basic ingredients is simple and easy to make, ready in 30 minutes. With a sprinkle of mozzarella, melting over the chicken and veggies, you’ll want to make this for dinner tonight.

  • 800g chicken strips
  • 200g reduced-fat plain cream cheese
  • 1 red onion, chopped
  • 3 cloves of garlic, minced
  • 2 tsp of extra virgin olive oil
  • 250g of white button mushrooms
  • 1/2 tsp of kosher salt
  • 3/4 tsp of black pepper
  • 1/4 chicken stock (low-sodium preferred)
  • 1/2 cup shredded mozzarella cheese
  • 4 tbs of fresh parsley, chopped
  • For Serving (options you can choose): Steamed rice, steamed broccoli (to add to your dish) and warmed peas (to add to your dish).


  • Step 1: Grab a large skillet, add oil and place this over medium heat.
  • Step 2: Add onion, mushrooms and sauté this for 4-5 minutes. Add in garlic and sauté this for another 30 secs.
  • Step 3: Next, add your chicken strips into a bowl and lightly season with salt and pepper.
  • Step 4: Increase the heat to medium-high, add your seasoned chicken strips into the pan. Sear this off for 6-8 minutes, until the chicken is a nice golden brown.
  • Step 5: Add in the chicken broth, cream cheese and stir this in until the cheese is melted and mixed in. Sprinkle some mozzarella over the pan, cover and reduce the heat down, cooking for another 2-3 minutes until the chicken is cooked through. Season further (if required.
  • Step 6: Serve your chicken over some steamed rice. Mix your options such as warm peas or broccoli with a sprinkle of parsley (if desired).
